Ingredients
1 pound lean ground beef 2 tablespoons olive oil 1 large sweet or yellow onion chopped 3 garlic cloves minced ¼ cup white wine 1 cup rice 1 cup tomato sauce 1 cinnamon stick 1 bayleaf 1 cup shelled chestnuts, boiled and chopped ½ cup pine nuts ¼ cup raisins (optional) (hydrated in water for 30 minutes) 2 cups hot water Cooking Method
Saute the chopped onion and garlic in olive oil until translucent. Add ground beef and saute over medium/low heat until brown. Add white wine and cook until it evaporates. Add tomato sauce, cinnamon stick, bayleaf and stir.
Add rice, salt and pepper. Cook for a couple of minutes stirring continually. Add the hot water, cover the pan and cook for 20 minutes or until rice is cooked.
Add chestnuts, raisins and pine nuts and stir.
Serve as is or transfer to a baking dish, cover with aluminum foil and keep warm in the oven.
HELPFUL TIPS
Supermarkets sell ready to eat chestnuts already shelled and boiled (I like Galil brand). You may substitute dried cranberries for raisins. You may substitute another nut like walnuts or slivered almonds.
