Mediterranean Style Salmon

Ingredients

For Salmon:
4-5 salmon fillets (16 oz total), patted dry with paper towel
1 small red onion, sliced
1 lemon, thinly sliced
salt
For Topping:
¼ olive oil
juice of 2 lemons
1 clove garlic, minced
1 cup cubed feta cheese
1 cup cherry tomatoes, halved
¼ cup english cucumber, chopped
¼ cup sliced kalamata olives
¼ cup chopped red onion
2 tablespoons fresh chopped dill
1 teaspoon dried oregano
freshly ground pepper
½ teaspoon red pepper flakes (optional)
Cooking Method
Start by marinating the feta cheese: In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, pepper and red pepper flakes. Add feta cheese and toss to coat. Cover and refrigerate while preparing the other ingredients, about 10 minutes.
Preheat your oven to 375 F.
Scatter the sliced onion and lemon slices at the bottom of a large baking dish. Add salmon slices (skin side down) on top, sprinkle with salt and bake for 20 minutes, until opaque.
While salmon is baking, prepare the topping: Add tomatoes, olives, cucumbers, red onion and dill into the bowl with the marinated feta. Fold gently to combine.
Plate salmon with lemon and red onion slices and top with feta mixture.
Serve with your favorite rice and tzatziki sauce on the side.
