Oatmeal Banana Bread Cookies

Time to Prepare: 15 minutes Cook Time: 12 minutes Serving: 26 cookies



Ingredients

2 sticks unsalted butter, at room temperature 1 cup brown sugar 2 large eggs, at room temperature 1 teaspoon vanilla extract 2 cups all purpose flour 2 cups rolled oats 1 teaspoon baking soda 1 teaspoon ground cinnamon ½ teaspoon salt 3 medium ripe bananas, mashed 1 cup semisweet chocolate chips Cooking Method


  1. Preheat the oven at 375 degrees F.

  2. In a mixing bowl, use a hand held or stand mixer with a paddle attachment to cream together the butter and sugar until light and fluffy. Beat in the eggs, (one at a time) and vanilla.

  3. In a separate bowl, stir together the flour, oatmeal, salt, baking soda and cinnamon.

  4. Add the dry ingredients to the butter and sugar and beat until combined.

  5. Fold in the mashed bananas and chocolate chips until incorporated.

  6. Line a baking sheet with parchment paper or spray with non stick spray.

  7. Use an ice cream scoop to drop scoops of cookie mixture onto the prepared baking sheet.

  8. Bake for 12 minutes or until the edges are browned and cookies are set.

  9. Cool on a wire rack. Enjoy!

HELPFUL TIPS

You can substitute raisins, walnuts or pecans for the chocolate chips, if you prefer.
