Ingredients
8 oz. almond paste, crumbled
½ cup powdered sugar
½ cup granulated sugar
¼ cup all purpose flour
½ teaspoon baking powder
2 egg whites, beaten
pinch of salt
1 cup pine nuts
Cooking Method
Preheat the oven to 350 degrees F.
Line two baking sheets with parchment paper.
Place pine nuts in a bowl.
Sift granulated sugar, powdered sugar and flour into a separate bowl.
Using a paddle attachment of an electric mixer, beat the crumbled almond paste on low speed until it reaches the texture of small crumbs.
Add beaten egg whites and mix on high speed until it reaches the consistency of a smooth paste. Scrape the sides of the bowl occasionally. Add the dry ingredients (sifted sugars and flour) and a pinch of salt. Beat until combined.
Scoop the dough using a teaspoon (or a cookie scoop) and place on the baking sheet two inches apart. Press each cookie with about 6 or 7 pine nuts.
Bake for 15-18 minutes, until lightly browned. Allow cookies to cool for a couple minutes before removing from the pan.
HELPFUL TIPS
Break up the almond paste with your hands before using the electric mixer. Store cookies in an airtight container.
