Ingredients
8 flounder fillets
1 medium onion
16 oz frozen spinach, defrosted
8 oz crumbled feta cheese
chopped dill
salt & pepper to taste
olive oil
white wine
paprika
juice from 1 large lemon
Serve with:
Rice or mashed potato
Cooking Method
Rinse flounder fillets in cold water, pat dry and set aside.
Place the spinach in a kitchen towel and squeeze out excess liquid. Keep squeezing until there is no more liquid.
In a large pan, sauté onion in olive oil. Add spinach and cook for two minutes.
Add crumbled feta cheese and continue to stir until well incorporated. Add dill and stir.
To assemble the fish rolls, place one tablespoon of the spinach mixture onto the wide end of each fillet and roll.
Place the fish roll, seam side down, on a greased baking dish. Repeat the same with the rest of the flounder fillets.
Spoon lemon juice on top of each fish roll, drizzle with olive oil and sprinkle paprika on each roll. Add two tablespoons of wine on the bottom of the pan.
Bake in a preheated 400 degree oven for 15 to 20 minutes or until the fish flakes easily when tested with a fork/ opaque all the way through.
Serve with rice or mashed potato.
HELPFUL TIPS
You can omit the lemon juice and/or the olive oil before baking the stuffed flounder fillets and add them after they finish baking and before serving. Paprika gives the flounder fillets color but if you do not like it, you can sprinkle chopped parsley or basil.
