Ingredients
1 cup peanut butter
1 cup powdered sugar
3 tablespoons margarine, melted
10-12 oz. package of chocolate chips
1 tablespoon shortening
Sprinkles or topping of your choice, optional
Cooking Method
In a mixing bowl, use a spatula to mix the peanut butter, sugar and margarine well.
Using your hands, form the dough into 1-inch balls. I use a small cookie scoop, which is about 1.5 tablespoons of cookie dough per ball.
Line a cookie sheet with wax paper. Place each ball on the wax paper. Freeze for at least 20 minutes.
Melt the chocolate over a double boiler or in the microwave in 30-second increments.
Place each frozen peanut butter ball on a fork and dip them one at a time into melted chocolate. Allow excess chocolate to fall off.
Place the chocolate balls onto wax paper and refrigerate until set.
If you wish to add sprinkles or topping of your choice, you must do so immediately after you apply the chocolate.
HELPFUL TIPS
You can use any nut butters for this recipe such as almond butter, cashew butter, etc.
You can make the frozen peanut butter balls the day before and dip them into the chocolate the day of.
