Watermelon and Grilled Peach Burrata Salad

Time to Prepare: 10 minutes Cook Time: 10 minutes Serving: 4-6 People


Ingredients

Prep: Seedless watermelon, cubed 4 peaches, cut into wedges One 8 oz. ball of burrata cheese or two 4 oz. balls of burrata drizzle of balsamic glaze arugula Cooking Method

  1. Prepare peaches: Preheat a cast iron skillet or grill pan over medium-high heat. You can also use the BBQ. Spray the peaches with cooking spray and grill them cut side down about 2 minutes on each side, or just long enough to make charring marks.

  2. To serve: Line the bottom of a shallow bowl with a thin layer of arugula. Place the burrata in the center and arrange the grilled peaches and desired amount of cubed watermelon around the burrata.

  3. Drizzle with balsamic glaze and enjoy!


HELPFUL TIPS

You can grill the peaches in advance and assemble right before serving. Do not drizzle balsamic glaze until ready to serve for a nicer presentation!
